Double Chocolate Raspberry Cheesecake Bites and Help Whip Cancer Pampered Chef Giveaway

I was honored when The Pampered Chef asked me to participate in their this year. Ever year and makes them available during May and October. For each pink product purchased they donate one dollar to the American Cancer Society. During the month of May you can also host a and 25 percent of the proceeds will go to the ACS.

The contributions go to support breast cancer education and early detection programs. Many of my friends and neighbors or members of their families have battled breast cancer and others are still fighting the fight.

help whip cancerTo show my support for the Help Whip Cancer Campaign, I am turning one of my favorite desserts pink. We are also giving away this years pink products (pictured above) Catch me after the jump for the recipe and the giveaway details.

I LOVE brownies and I LOVE Cheesecake, it seemed fitting to pair them up for the perfect pink dessert. And what better way to turn it pink then with my favorite berry. These Double Chocolate Raspberry Cheesecake bites are fun and simple to make. Would work great with other types of berries and jam as well.

Raspberry Cheesecake Bites

Without even realizing it, almost every kitchen tool I used for this recipe was a Pampered Chef Product. It is safe to say I am a fan! From the Mini Muffin Tin and Mini Tart Shaper, to the cooling rack, berry spinner, food chopper, heck even the spatula I used for the filling was Pampered Chef. Yep, I’m addicted.

Now onto the recipe.  I can’t wait for you to try these!

Double Chocolate Raspberry Cheesecake Bites


1 brownie mix (prepared according to package instructions, but uncooked)
1/2 cup dark chocolate of choice, chopped into small pieces
1 8 oz package cool whip
1 8 oz package cream cheese, softened
1/3 cup powdered sugar
4 tbsp raspberry jam or preserves
fresh raspberries for garnish


  • Preheat oven to 350°
  • Combine chopped chocolate with brownie batter
  • bake in a greased mini muffin tin for 14 minutes or until toothpick comes out clean.
  • use  to press the center of each brownie firmly, to create well for the filling
  • let brownies cool completely (I take mine out of the tin and let them cool on a cookie rack)
  • prepare filling by combining softened cream cheese and raspberry jam, mix thoroughly
  •  Stir in powdered sugar and then fold in cool whip until evenly distributed
  • Fill a piping bag or zip lock baggie with cheesecake filling and fill each brownie bite with filling
  • Clean berries and use them for garnish on the finished Cheesecake Bites.
  • Refrigerate before serving
